Mixed Green Salad with Walnuts & Feta

Try this delicious mix of veggies and toppings with an easy, go-to homemade lemon garlic dressing; change up the veggies and nuts or cheese as you like!


>> Makes 4 entree salad servings/recipe

Ingredients: -8 oz mixed greens ( such as spring mix or chard/spinach/baby kale mix) - 1/2 medium red onion, sliced into half-moon slivers - 1/2 pint cherry or grape tomatoes, halved - 1/2 medium red or yellow bell pepper, diced

- 2 oz feta cheese crumbles - 1/2 cup chopped walnuts

- 1/4 cup dried cranberries

- 12 oz. grilled/baked chicken (lime marinade below)

Directions: In a large serving bowl, layer greens, red onion, tomatoes, diced bell pepper and sprinkle with feta cheese, chopped walnuts and craisins, and dress with lemon garlic dressing. Top with 3 oz. cooked chicken breast each portion.

Lemon Garlic Dressing In a small bowl, portioned for 4 servings of the green salad, whisk together: - 5 tbsp lemon juice (such as Nellie & Joe's Key West Lemon Juice) - 3 tbsp extra virgin olive oil - 1 tbsp dried parsley - 1 tsp garlic powder - salt (about 1/2 tsp) and black pepper to taste

Lime Marinated Grilled Chicken (optional) Use to marinate 1 lb. organic chicken breasts (about 4 medium breasts) and pour marinade over chicken as you pan-saute or grill the chicken.

In a medium bowl, whisk together the following ingredients and set chicken breasts in sealed bowl refrigerated overnight: - 4 tbsp lime juice (such as Nellie & Joe's Key West Lime Juice) - 3 tbsp extra virgin olive oil - 2 tbsp dried parsley - 1 tsp garlic powder - salt and black pepper to taste Preheat oven to 350 degrees; Heat medium pan to medium high heat with a little avocado oil, cook chicken breasts 2-3 minutes on each side; transfer chicken to a pan lined with parchment paper, and cook for an additional 15-20 minutes on the middle rack before slicing to serve.
